Meal Plan for February 10th – 16th. I didn’t get to some of my recipes from last week. So I am reusing them this week. That is why I love going shopping each week. If food is not used it can be used for the next week and saves me money!

Monday February 10th – Easy Beef Stroganoff  (from All Recipes)

Ingredients 12 (6 ounce) package egg noodles, cooked and drained 6 ounces fresh mushrooms, sliced 1 onion, chopped 1/4 cup butter 2 pounds lean ground beef 4 tablespoons all-purpose flour 2 cups beef broth 1 cup sour cream salt and black pepper to taste


  • 1. Bring a large pot of water to a boil. Cook egg noodles in boiling water until done, about 8 minutes. Drain.
  • 2. Meanwhile, prepare the sauce. In a large skillet, cook mushrooms and onions in 2 tablespoons of butter over medium heat until soft; remove from pan.
  • 3. Using the same pan, melt remaining butter. Cook ground beef in melted butter until browned. Mix in flour. Stir in beef broth, and cook until slightly thickened. Add mushroom and onion mixture; stir in sour cream. Season to taste with salt and pepper.  Continue cooking until sauce is hot, but not boiling. Serve sauce over egg noodles.

Tuesday February 11th– Baked BBQ Chicken (from Lil’ Luna) Ingredients 4 whole boneless skinless chicken breasts pounded to less than 1 inch thickness 1 tablespoon Worcestershire sauce 3 tablespoons brown sugar 1/2 cup apple cider vinegar 1/4 cup ketchup 1 teaspoon paprika 1/4 teaspoon garlic powder 1/4 cup extra virgin olive oil 6 tablespoons butter melted

Instructions 1.Preheat oven to 375 and lightly grease a shallow baking dish with cooking spray. 2.Whisk together Worcestershire sauce, brown sugar, and next seven ingredients. Pour 1/3 of sauce into prepared baking dish. Place chicken in a single layer on top of sauce. Pour 1/3 of remaining sauce over chicken. 3.Bake chicken 20-25 minutes until cooked through. Top chicken with remaining sauce if desired and serve hot with preferred sides.
